Ingredients
- 10 Prawns

- 1 Tsp Chettinad Masala Powder

1/2 Tsp Garam Masala
- Salt (as needed)
- 2 Tbsp Yogurt
- 2 Cups Basmati Rice
- 5-6 Cups Water
- Salt (as needed)
- 1 Black Cardamom
- 5 Green Cardamoms
- 1 Mace
- 5 Cloves
- 2 Star Anise
- 1 Cinnamon Stick
- 1 Bay Leaf
- 1 Tsp Black Peppercorns
- 1 Tbsp Ghee
- 1/4 Lemon Juice
- 2-3 Tbsp Ghee
- 1 Onion (Chopped)
- Salt (to cook and brown the onions faster)
- 1 1/2 Tbsp Ginger, Garlic & Green Chilli Paste
- (2 inch Ginger + 4 Garlic + 3 Bird’s Eye Chillies = Pounded into paste)

- 1/3 Cup Mint Leaves
- 1/3 Cup Coriander Leaves
Prawn Marination
Basmati Rice
Prawn Gravy
Directions
In a deep pot, add ingredients as mentioned under Basmati rice and boil for 5-10 minutes till the rice is cooked for 80%. Drain out the excess water and set aside.
Cook the prawn gravy using the ingredietns provided. After adding marinated prawns cooking time should be within 3-5 minutes to avoid overcooking the prawns.
Layering for Dum Briyani
1 Tbsp Ghee
Cooked Basmati Rice
Prawn Gravy
Mint Leaves
Coriander Leaves
Cashews (Ghee Fried)
Cooked Basmati Rice
Mint Leaves
Coriander Leaves
1 Tbsp Ghee
Saffron Milk
1 Tsp (Orange food colouring water)
Cashews (Ghee fried)
Fried Onion (Sliced)
Layer in the above sequence, cover the pot with aluminium foil and close lid and cook it on low flame for 5 minutes. After 5 minutes open lid and fluff up the Briyani gently and mix together the layers. Serve it with Raita of choice.
